  • Let it simmer on medium-low heat for 15 minutes. 
  • Let the cheese cook. In the meantime, get your greens ready. After, carefully washing, stemming, and tearing them, add everything to the saucepan. 
  • Do not overcook-just for 3-5 minutes. The greens should retain their freshness and color. 
  • Now, turn the heat off and let the soup cool down for a bit. 
  • Transfer the contents to a blender pot and crush till the soup is smooth in consistency.

1/2 tsp salt
1/2 tsp rosemary leaves
1/4 tsp black pepper
1/4 tsp ground nutmeg


1. First, steam the sunchokes in a vessel inside a water pan. Heat for 10 minutes till they are crisp and tender. 

2. Keep the crispy sunchokes aside. Now, steam asparagus for 5 minutes. 

3. Transfer to a cold water vessel. After draining, mix sunchokes with the asparagus dish. 

4. Toss the remaining ingredients in a small bowl. Mix them well. Add vegetables after whisking well. 

5. Marinate for 10 minutes. Serve when it is at a normal temperature.

  • 4 cups Butternut Squash 
  • ¼ Tbs Black pepper 
  • 1 Tbs Fennel Seeds 
  • ½ inch ginger 
  • ½ lime

  • 2 clove garlic
  • 4 cup water
  • ½ cup onion


  • Roast the butternut squash in the oven at 350 degrees for about half an hour. 
  • Let it cool in a separate vessel. 
  • Carefully, peel the skin. Also, cut the butternut squash into cubes. 
  • Heat ghee in a large saucepan. Saute onions until golden brown. Add finely chopped ginger and garlic for flavor. To this, add salt, fennel, and pepper. 
  • Let it fry for 40 seconds, making sure the garlic does not burn. 
  • After this, add butternut squash with 4 cups of water and let it boil. 
  • After a boil, simmer the heat and let it cook for half an hour.
